The season is just getting started, and I’m already stumped for how to make something interesting with my weekly bounty. Ridiculous amounts of radishes and gobs of garlic scapes were taking up a ton of space in my refrigerator (which died and needed to be quickly replaced this week). I ended up making a version of the Balsamic Glazed Radishes I made last year, roasting them instead and adding some honey.
The scapes will eventually be turned into pesto, once I’ve tired of using them in place of regular garlic when I saute up bunches of greens. I’m still looking for more creative uses for both radishes and scapes. Let me know if you have any good ideas!
A stir fry is also a good way to combine lots of different ingredients (including those radishes). Or you can use the cabbage or lettuce leaves as wraps for the ground meat of your choice, mixed with some onions, peppers and anything else you want to throw in.
To get you ready for the rest of the season’s crop, here are some recipes I came up with when trying to make the most of last year’s veggie share:
Tuscan Kale Gratin with Caramelized Onions
Kale Chimichurri
Kohlrabi Puree
Summer Corn Chowder
Chilled Curried Carrot Soup
Roasted Pepper Maple Bourbon BBQ Sauce
Beet and Goat Cheese Puree
Oven Roasted Okra
